Idiazabal D.O.

This Aialde Idiazabal is made from Lacha and Carranzana sheep’s milk in the mountainous Basque region of Spain. The characteristically smoky flavor results from its storage in simple mountain huts with fireplaces and no chimneys. Its texture is pleasantly firm and buttery with a taste reminiscent of cooked caramel and bacon.
