BALLS OF SPINACH AND EDELBLU

Ingredients 

  • 1 cup cooked spinach

  • 3/4 cup edelblu

  • ⅓ cup breadcrumbs

  • 2 eggs

  • Olive oil for frying

  • Salt and Pepper

First, blend the spinach with the edelblu, the breadcrumbs and one of the eggs. Then, shape the mix into balls. In a terrine, beat the other egg, and start to coat the balls with breadcrumbs, placing them first in the egg and then in the breadcrumbs. Next, fry the balls at 338F in plenty of oil suitable for frying. Finally, dab the balls on a kitchen towel and serve them hot. Enjoy!
