Tipperary Irish Potato Bites

Ingredients 

  • 12 small Yukon gold potatoes 

  • 1 tbsp Tipperary Pure Unsalted Irish Butter

  • 1 cup grated Tipperary Irish Castle, divided

  • ¾ cup finely chopped ham 

  • ¼ cup nonfat plain yogurt 

  • ½ tsp salt 

  • ¼ tsp ground pepper

  • 3 onions thinly sliced


Preheat oven to 400 F.  Arrange potatoes on a rimmed baking sheet and bake, flipping halfway through until tender (35-40 minutes) Cut potatoes into halves, arrange on a baking sheet, and cool briefly. Using a teaspoon, scoop out the middle of each potato. Put potato flesh in a bowl and mash, add ⅔ cup of Tipperary Irish Castle, ham, yogurt, butter, salt, and pepper, & onion. Stir well, then scoop some of the potato mixtures into each potato half, then add the remaining Tipperary Irish Castle over top. Bake until golden brown and hot throughout (15 minutes)
