Tête de Moine
Tête de Moine means “Monk’s head”, it is a cylindrical semi-hard cheese and has a very fine dough that melts in your mouth. It is shaved into thing twirly rosette-shaped slices using a knife called “Girolle” or the “Pirouette”. As it is shaved into slices, it alters the structure of the cheese dough and it helps keep the aromatic flavor, and the melt in your mouth tastes develops. Tête de Moine is a great compliment on your next cheese board, as a snack, or dessert.
